(Chef De Partie - Mediterranean)
We are looking for a well experienced Chef De Partie - Mediterranean for a well-known event and catering firm “UNIVERSAL EVENT SPACE” located at 6250 Hwy 7, Woodbridge, ON L4H 4G3, Canada.

JOB DUTIES:
Oversee the preparation and execution of Mediterranean cuisine within the assigned kitchen section, with a focus on grilled and roasted meats, seafood, and protein-driven dishes, ensuring consistency with event specifications and menu standards.
Coordinate daily production for large-scale catering events, planning quantities and workflow to support high-volume preparation of meats and hot entrées across buffet and plated service formats.
Prepare and cook Mediterranean dishes such as souvlaki, kebobs, grilled lamb, chicken, and seafood, applying traditional techniques including marination, open-flame grilling, and roasting with herb and citrus-based profiles.
Supervise and direct cooks in the preparation of proteins, assigning tasks related to butchery, portioning, marination, and cooking to maintain efficiency and consistency.
Execute grilling, roasting, and searing techniques for meats and seafood, ensuring proper doneness, texture, and flavour across batch production.
Prepare and coordinate Mediterranean accompaniments including tzatziki, yogurt-based sauces, and herb emulsions to complement grilled and roasted proteins.
Monitor quality and presentation of meat and seafood dishes during service, making real-time adjustments to maintain consistency across high-volume event execution.
Coordinate with other kitchen sections to ensure timely service and synchronization of protein dishes with sides, salads, and plated components.
Manage inventory and storage of meats and perishable proteins, ensuring proper handling, rotation, and minimal waste within the assigned section.
Ensure compliance with food safety and sanitation standards, particularly in the handling, preparation, and cooking of raw and cooked meats.
Prerequisites:
Education: Bachelor’s or equivalent experience.
Experience & Skills: 5 years or above of experience within the Food Industry.
Language: English
Hourly Rate: $36 for 30 to 40 Hours per week
Starting Date: As soon as possible
Terms of Employment: Fulltime and permanent
Benefits: 4 % Vacation Pay
