Title of the position: Pastry Chef – NOC 62200
Number of positions available: One.
Term of employment: 35h to 40h per week – full time – permanent position.
Language: English or French.
Wage: C$37.00 per hour.

Job Duties
· Create visually stunning French pastries, including croissant, chocolate croissant, danishes, macarons, madeleines, and tarts tatin
· Master the art of laminating dough including technique for croissants, puff pastry and danish pastry.
· Develop and test new recipes for seasonal menus and special events.
· Prepare and execute French mignardise, including petits fours and other bite-sized dessert.
· Develop and execute intricate designs and sugar work including pulled sugar and blown sugar decoration
· Ensure consistent quality, taste, and presentation of all products.
· Collaborate with pastry team to develop new recipes and menus.
· Supervise and coordinate daily activities of 4-6 bakers.
· Train, mentor, and evaluate staff on techniques, hygiene, and efficiency.
· Plan and organize production schedules to meet customer demand.
· Monitor stock levels and implement proper rotation and storage.
· Ensure strict adherence to food safety, sanitation, and health regulations.
· Meet with customers for custom orders and provide recommendations.
Requirement techniques
· Expertise in laminating dough and creating flaky, buttery pastries.
· Proficiency in working with sugar, including pulled sugar, blown sugar, and other techniques.
· Knowledge of French patisserie techniques, including croquembouche, mille-feuille, and other classic dessert.
· Experience with intricate cake decorating and design.
· Ability to work with precision and attention to detail
Requirements
· Pastry culinary diploma required.
· Minimum 3 years of experience as a Pastry Chef in a fine dining or high-end French bakery setting.
· Strong understanding of French patisserie technique and traditions.
· Excellent knife skills and ability to work with precision.
· Ability to work in a fast-paced environment and meet deadlines.
· Leadership skills and advanced communication skills.
· Strong organizational skills and accuracy in executing tasks.
· Ability to work effectively as a team member.
